Description:
Glycerol monolaurate is a common food additive, belonging to nonionic surfactants, formed by the esterification of lauric acid and glycerol. The chemical structure of glycerol monolaurate is that one hydroxyl group of glycerol is bound to lauric acid (a C12 fatty acid), while the other two hydroxyl groups remain in a free state.
